Neutron stars are ready-made laboratories offering us the prospect of probing the behavior of matter at extremes of density, pressure, temperature, gravitational field strength, and rotation rate.   In this talk I will describe how astronomical observations are enabling us to look inside these objects, allowing us to examine the nuclear equation of state in regimes inaccessible to terrestrial experimenters.
