Biography

Joonhyeong (Joseph) Kim obtained some industry experience in the service industry before starting his study in the hospitality industry. Past work experience in the UK includes kitchen operations, specifically cooking. For example, he worked for Hilton Isle of Man and Marcus Wareing at The Savoy Grill, London as a commis-chef. Based on this past experiences, he got to realise that the essence of the service industry does not lie in satisfying the customers’ needs, but rather serving the customer with a sense of love. Having understood some of the core characteristics of the service, he further studied his MSc Food Management under Professor Peter Jones, previously ITCA (International Travel Catering Association) Chair of Production and Operations Management, writing his thesis on the role of service level agreements in flight catering. Currently, he is continuing his PhD studies on a part time basis at the University of Surrey, researching sustainable supply chain management in the flight catering industry. The preliminary analysis, as part of PhD studies, has been published in Onboard Hospitality, the official publication of the ITCA.

Drivers of Sustainable Performances across the flight catering supply chain: from corporate and supply chain level

Aims of Main Study

Based on the result of the exploratory study, this study intends to conduct the main study with the following objectives:

  • To evaluate corporate/supply chain specific environmentally and socially sustainable performances across the flight catering supply chain
  • To identify the drivers of corporate environmentally and/or socially sustainable performances across the flight catering supply chain
  • To identify the drivers of supply chain specific environmentally and/or socially sustainable performances across the flight catering supply chain

Methodology

This study has adopted the in-depth interview technique. Using an interview guide, 23 semi-structured interviews were conducted either face to face or via telephone. After all the data was transcribed word for word, the process of data analysis went through data reduction, data display and drawing a conclusion , an individual technique of Miles and Huberman (1994).
