Biography
Margaret Lumbers is a Reader in Food Management and founding member of the Food, Consumer Behaviour and Health Research Centre. She is joint Programme Leader of the MSc Food Management. Research is primarily concerned with understanding public policy, food choice and consumer behaviour in various service sectors (retail, tourism, hospitality and health) across different consumer groups using a variety of research methodologies (both qualitative and quantitative).
Research Interests
Margaret Lumbers has played a central role in securing research funding for National and European projects. A major project was as Principal Investigator for a 2.1 million pound EU funded Food in Later Life involving a multidisciplinary team of nine research groups across eight European countries. She is currently leading an evaluation of a health promotion campaign (e.g. a local healthy eating policy initiative for the Government Office for South East and Surrey Trading Standards involving local food businesses and consumers). Research has also focused on ageing population needs such as an investigation of older consumers’ food preferences and provider perceptions in public and private sector residential homes for the International Longevity Centre and the ‘needs and wants’ of older shoppers for the British Council of Shopping Centres. She has been involved in a number of educationally based projects for the Food Standards Agency. These include nutrition and healthy catering training in Scotland as well as food hygiene and safety training in schools and catering establishments in England and Wales. Other projects include the EuroFIR (European Food Information Resource) Network of Excellence. Her research focus therefore covers food management issues such as consumer choice, ageing population needs, food policy, healthy eating and food safety.
Food Consumer Behaviour and Health Research Centre
Margaret Lumbers is a founding member of the Food Consumer Behaviour and Health Research Centre. This is a multidisciplinary centre involving psychology, biological sciences and management and skills and expertise from across the University of Surrey in order to address research questions on food, consumer behaviour and health and which has successfully secured significant funding.

Abstract
BMI differentiation and obesity incidence in relation to food patterns of Polish older people were analysed. The research included 422 people aged 65+ years. 21 food patterns were separated by the factor analysis. On the basis of the self-reported body mass and height, the BMI and percentages of overweight or obese people were calculated. The increase of the BMI and overweight and obesity incidence for both sexes was unequivocally connected with eating rye. The increase of the BMI and overweight and obesity incidence depended among women on consuming pork raeat and alcoholic beverages. For men the increase in eating dairy products was connected with the overweight incidence increase. The role of fruit and vegetables needs to be explained in further studies.

Abstract
Decentralisation of many food retailers to edge-of-town and out-of-town locations has resulted in some older people experiencing difficulty in accessing food shops and those experiencing the greatest difficulties in food shopping are considered to be at the greatest nutritional risk. The present study examines how and to what extent usage of, and physical access to food shops might influence dietary variety. Shopping behaviour and dietary variety are investigated using focus groups, a consumer questionnaire and a food frequency questionnaire (FFQ). A dietary variety score system, developed from the FFQ, is employed in this study. Neither usage of (particular) food shops nor basic accessibility variables are found to have a direct effect on dietary variety. Yet, coping strategies employed by older consumers to obtain food are revealed to be important. This suggests that more complex access factors remain an important issue for study in relation to the shopping experience of a proportion of the older population.

Teaching
Margaret Lumber’s teaching is in the area of food choice and consumer behaviour, food policy and new product development to undergraduates and postgraduates. She supervises eight doctoral students in the fields of food choice, organic foods, food provision in hospitals, food preferences of airline passengers, service quality and user satisfaction, sustainability in the food supply chain and food retailing in China.
